The combination of rich meat sauce and chewy noodles, plus a lot of cheese, is the reason why the classic Italian meat sauce is so popular.
But in this Italian staple food, there has been a debate over which ingredients are available and which ones should not be used; however, now it seems that there may be an answer to this dispute.
Because the Italian Academy of Cuisine released the latest version of Italian meat sauce in April 2023; the organization was established in In 1953, "the purpose is to protect the tradition of Italian cuisine."
Although everyone knows that Italian meat sauce contains ingredients such as minced beef, red wine, croquette, celery and sausage, there is actually an ingredient you would never think of; according to this lesson, when cooking Italian meat sauce, you should also add a cup of whole milk.
According to Amira Georgy, Food Director of Taste Australia, milk is included in the ingredients list because milk "helps to counteract the acidity of tomatoes and red wines", while also "makes the minced meat tender and produces a delicious taste that melts in your mouth."
But milk is not the only ingredient that may surprise most people, others include Pancetta and cardamom.
The organization also listed a list of ingredients that are "not to be changed" in the tomato sauce, including veal, smoked bacon or bacon, and can only be minced pork instead of beef; garlic, rosemary, celery or other herbs and spices, and white garlic can not be used instead of wine, or flour can be used to thicken.
But ingredients that can be used to make the noodles richer include: chicken liver, chicken hearts and gizzards, peeled and chopped pork belly; in addition, blanched peas and dried boletus that can be resoaked.
According to the Italian cuisine, the method of making perfect tomato sauce is as follows:
-First, melt the ground or chopped Italian bacon with olive oil in 10-inch crock.
-Chop the stew, celery and stew with a kitchen knife, and never use a food processor.
- Add the vegetables to olive oil and bacon, cook slowly over low heat, stirring constantly with a wooden spoon until the vegetables are soft but not colored.
-Refresh the heat to medium heat, add the meat and stir, then cook for about ten minutes, stirring constantly until hissing and turning brown.
-Add red wine and cook over medium heat until completely washed, then add tomato puree.
-After mixing, add a cup of rolled soup or water, put it on the cover, and heat it for about two to three hours. The time is determined by the meat you like and use, and add hot soup or water according to your needs.
-When halfway through the cooking, add any type of milk, cook until it is completely steamed; add salt and pepper to taste before serving.
